Step-by-Step Cooking Process

1. Making Anchovy Stock

2. Preparing the Vegetables

  1. Cut the tofu into 2cm cubes.
  2. Slice the zucchini into half-moons about 0.5cm thick.
  3. Peel the potato and cut it into 1cm cubes.
  4. Slice the onion.
  5. Slice the green chili at an angle and finely chop the green onion.
  6. Remove the stems from the shiitake mushrooms and slice them 1cm thick.

3. Making the Doenjang Jjigae

  1. In the pot with the prepared stock, add perilla oil and sauté the minced garlic to release its fragrance.
  2. Add the potato and onion, and sauté for 2 minutes.
  3. Add the doenjang, dissolve it well in the broth, then add the gochugaru and sauté briefly.
  4. Add the zucchini and mushrooms and simmer for 2 minutes.
  5. Add the tofu and simmer for another 3 minutes.
  6. Add the green chili and green onion, simmer for 1 more minute, then turn off the heat.
  7. If needed, adjust the saltiness with soup soy sauce.
