Step-by-Step Cooking Process
1. Prepare the Ingredients
- Cut the kimchi into 2-3cm pieces using scissors.
- Slice the pork belly into bite-sized pieces.
- Cut the tofu into 2cm cubes.
- Slice the onion and cut the green onion diagonally.
- Remove the stems from shiitake mushrooms and slice them.
2. Sauté the Kimchi
- Heat perilla oil in a pot over medium heat and sauté the pork first.
- When the pork is partially cooked, add the kimchi and continue to sauté for about 5 minutes.

3. Create the Broth
- Once the kimchi and pork are well-sautéed, add 2 cups of water.
- When it starts to boil, add red chili powder, minced garlic, soup soy sauce, kimchi juice, salted shrimp (if using), and sugar. Stir well.
- Simmer on medium heat for about 10 minutes to allow the flavors to infuse into the broth.
4. Finishing Touches
- Add the tofu and shiitake mushrooms and simmer for another 5 minutes.
- Add the green onion and chili pepper, simmer for 1 minute more, then turn off the heat.
- Adjust the saltiness if needed (Note: Be cautious with salt as the kimchi and seasonings already contain salt).
